Caponata Recipe

I LOVE Caponata and can thank one of my TLS (Transitions Lifestyle System) students for introducing it to me. It is healthy, low glycemic and flexible. A triple whammy! It was a favorite recipe of my Italian TLS participant and he shared it with the class one day and I’ve been sharing it ever since. This recipe and is a great way to add more vegetables to a meal. I eat it hot but in Sicily many people eat it cold as an Antipasto. The recipe makes a large batch so it is a time saver that can be used all week when life gets rushed.  I love it over my morning omelet and I also use it to accompany fish or chicken.
