Lentil Soup with Spinach

Over the years I have tried a variety of lentil soup recipes and enclosed here is my version of a compilation of several recipes. Known as one of the world’s healthiest foods, lentils are nutrient-dense and easy to prepare.

Notes on Nutrients

Lentils are a great source of soluble fiber, which helps with weight loss and helps lower bad cholesterol. They are also good for heart and digestive health and they help stabilize blood sugar.
The lentils, spinach and tomatoes are all rich in potassium which is important in controlling blood pressure. In addition, the spinach and tomatoes provide iron, Vit. C and lycopene.

Red Lentil soup

Ingredients

  • 1 TBS Olive Oil
  • 1 Medium onion
  • 1 leek white and green parts chopped
  • 3 cloves garlic, chopped
  • 3 carrots, chopped
  • 1-14oz can diced tomatoes with juice
  • 1 stalk celery, chopped
  • 1 TBS cumin
  • 1/2 tsp sea salt
  • 1 cup dried red lentils
  • 5 1/2 cups vegetable or chicken broth
  • 1-2 large bay leaves
  • 1 tsp thyme
  • 1-2 TBS parsley
  • 1 bag of baby spinach, chopped
  • Directions
    Heat oil in large saucepan, saute onion and chopped leek for about 5 mins till onion is golden. Add garlic, carrots, tomatoes, celery, cumin, salt and saute, for 2 minutes. Add lentils, and broth and simmer until lentils are tender about 8-10 minutes. Stir in spinach and parsley and season with salt and pepper.
