Here is a healthy and easy Tomato Soup Recipe for those moments when the family is yearning for comfort food like Tomato Soup and a grilled cheese sandwich. As with all soup, I make mine in big batches so I have plenty on hand during the week for lunches, dinners, or snacks at home or on the road out of a thermos. It’s also my favorite treat when I’m training my dog team. I love stopping to rest and eating soup out of a thermos on the trail particularly when I’m training on snow.
Here is my favorite go-to Tomato Soup Recipe.
Tomato Basil Soup
Ingredients
Makes 4-6 servings
1 TBS olive oil
1 onion, minced
1 28oz can crushed tomatoes (make sure there is no added sugar in the list of ingredients)
2 14.5 oz cans diced tomatoes(make sure there is no added sugar in the list of ingredients)
1 garlic clove, minced
3 cups vegetable broth (I prefer the flavor of the veg. broth but you can also use low fat chicken broth)
1/2 cup dry white wine
2-4 TBS sun-dried tomato paste. I use more rather than less.
2 TBS basil
Directions
Heat the oil and butter in a large saucepan until foaming. Add the onion and cook slowly for about 5 minutes, stirring frequently, until soft, but do not let brown.
Stir in the tomatoes and garlic, stock, white wine, and sundried tomato paste, with salt and pepper to taste. Bring to a boil. Lower the heat, half-cover the pan, and simmer slowly for 20 minutes.
Process the soup with the basil in a food processor or blender.
Check consistency and add more stock, if necessary. Adjust the seasoning to taste, pour into bowls and serve.
